Briam Vegetables

This recipe can be used in all 3 our meal plans on the app: the Low Carb(Banting/Keto); the Low GI Low Fat meal plan and the Mediterranean diet.

An absolutely delightful Mediterranean Dish. The name Briam most probably comes from the Turkish word biryam, but its roots are from the Persian biryan. Briam is basically roasted vegetables, the Greek way. A few simple ingredients turned into a feast!

Serving size

Serves 4

Ingredients:

1 medium eggplant, sliced in circles

1 green pepper, strips

1 red pepper, strips

1 yellow pepper strips

4-5 baby marrows, cut lengthwise

1 red onion, chopped

olive oil

2 tablespoons fresh dill

2 tablespoons fresh parsley

2 garlic cloves, chopped

salt and pepper to taste

¾ cup tinned tomatoes

fresh parsley for garnish

Directions:
  1. Preheat the oven to 180°C (356°F).
  2. Arrange the eggplant, peppers, baby marrow and onion in an oven dish. Pour olive oil over the vegetables and make sure it is well covered.
  3. Add the dill, parsley, garlic, salt, and pepper and mix well.
  4. Add the tomatoes and mix.
  5. Cover the oven dish with foil and bake for 90 minutes.
  6. Garnish with parsley (optional).
