Butter Beans with Chorizo

The flavours of Spain – in one pot!
You’ll love this tasty one-pot supper (less washing up and lots of flavour). What really makes it special is the quality of the basic ingredients. You’ll never get tired of it.
Serving size
Serves 4
Ingredients:
150g chorizo
1x 410g butter beans, drained
1 teaspoon smoked paprika
¼ cup white wine vinegar
2 tablespoons Old Brown sherry
2 garlic cloves, chopped
2 lemons, juiced
1-2 tablespoon fresh mint, chopped
Method:
- Cut the chorizo into 0.5cm slices, and then halve it
- Fry the chorizo in a pan until brown.
- Add the butter beans.
- Mix the paprika, vinegar, sherry, garlic, and lemon juice.
- Pour the sauce over the bean mixture into the pan.
- Fry until the vinegar and sherry have evaporated.
- Serve warm and sprinkle mint leaves over.
