Butter Beans with Chorizo

The flavours of Spain – in one pot!
You’ll love this tasty one-pot supper (less washing up and lots of flavour). What really makes it special is the quality of the basic ingredients. You’ll never get tired of it.

Serves 4


150g chorizo 

1x 410g butter beans, drained 

1 teaspoon smoked paprika 

¼ cup white wine vinegar 

2 tablespoons Old Brown sherry 

2 garlic cloves, chopped 

2 lemons, juiced 

1-2 tablespoon fresh mint, chopped


  • Cut the chorizo into 0.5cm slices, and then halve it
  • Fry the chorizo in a pan until brown. 
  • Add the butter beans. 
  • Mix the paprika, vinegar, sherry, garlic, and lemon juice. 
  • Pour the sauce over the bean mixture into the pan.  
  • Fry until the vinegar and sherry have evaporated.  
  • Serve warm and sprinkle mint leaves over.
