Chicken and mushroom pie

Ingredients:

5 chicken breasts, skinned

1 teaspoon olive oil

1 onion, chopped

2 slices lean ham or bacon, no fat

1 garlic clove, crushed

250g mushrooms

4 baby marrows, coarsely grated – optional

¼ teaspoon salt

½ teaspoon black pepper

15g mushroom soup powder

¼ cup fat-free milk

300ml boiling water

2 tablespoons oats

2 sheets phyllo pastry

1 egg, beaten


Directions:

1. Preheat the oven to 220°C (428°F). Spray an oven dish 200 x 200mm with non-stick cooking spray.

2. Cut the chicken breast into small pieces.

3. Pour the oil into a large frying pan over medium heat. Add the onion, ham or bacon, chicken and garlic and gently stir fry until brown.

4. Add the mushrooms, baby marrow, salt and pepper and cook until tender.

5. Mix the soup powder with the milk in a cup. Add some of the boiling water and mix well.

6. Pour over the chicken and mushroom mixture in the frying pan. Add the rest of the water and oats, stir until sauce has thickened slightly.

7. Pour the pie mixture into the greased ovenproof dish.

8. Take the phyllo pastry sheets and loosely pile them in a ruffled heap on top of the chicken filling. Brush lightly with the beaten egg.

9. Turn the oven down to 180°C (356°F) and bake for 15-20 minutes until the pastry is golden and the filling is heated through.
