Keto/banting bacon, cheddar & onion frittata
Who says frittatas are just for breakfast? This cheesy, bacon-packed beauty is just as happy starring in your lunchbox or making a guest appearance at dinner. Dress it up with mushrooms, chives, or whatever low-carb veggies are loitering in your fridge. Bonus: leftovers reheat like a dream—perfect for those “I overslept and now my coffee’s judging me” mornings.

Serving size
Serves 4
Approx. 368 calories per serving (¼ of the frittata).
Ingredients
1 small onion
6 eggs
60ml cream
2 tablespoons butter
1 cup of sliced mushrooms
1 cup of cheddar cheese
4 rashers of bacon
2 tablespoons of fresh chives chopped
salt & pepper to taste
Directions
- Preheat the oven to 190°.
- Dice the bacon, and fry it in a pan for 4 minutes.
- Then add butter, mushrooms and onion, and fry for another 3 minutes.
- Mix the egg and cream in a bowl, and add salt and pepper to taste.
- Add the cheddar to the egg and cream mixture.
- Add the egg mixture to the bacon, mushrooms and onions.
- Cook approximately for 2 minutes until the egg mixture is set.
- Place the pan in the oven and bake for 10 minutes or until the top is set.
- Sprinkle with fresh chives.
- Once cooked leave for 5 minutes to cool down before serving.
