Tomato and goats cheese tart

This easy to make keto tart would be a great appetiser or main course for LK Fitness App Keto/Banting followers who want to meal prep, impress their friends, or have their family gather around a delicious and wholesome meal.

Serving size

Serves 8 as a main dish, or 12 as an appetiser. 

Ingredients:

Pie crust

1 ½ cups almond flour

¾ teaspoon salt

¼ cup butter, melted

½ teaspoon garlic powder

Filling

1 savoury almond flour pie crust (store-bought or homemade)

6 slices bacon, chopped and cooked crisp

225g goats cheese, room temperature

3 large eggs, room temperature

¾ cup heavy whipping cream, room temperature

2 cloves garlic, minced

1 tablespoon chopped fresh basil

¼ teaspoon salt

¼ teaspoon pepper

2 medium tomatoes, thinly sliced (about 200g, or the equivalent of smaller tomatoes)

Instructions:

Pie crust
  1. In a medium bowl, whisk together almond flour, (sweetener if making a sweet crust), and salt. Stir in melted butter until dough comes together and resembles coarse crumbs.
  2. Turn out into a glass or ceramic pie plate. Press firmly with fingers into bottom and up sides. Use a flat bottomed glass or measuring cup to even out the bottom. Prick all over with a fork before baking.
  3. To bake unfilled, preheat oven to 160°C. Bake until edges are golden brown, about 20 minutes.
  4. To bake a filled pie, pre-bake 10-12 minutes before adding fillings. You may need to cover the edges in foil to avoid over-browning. Let the pie crust cool before adding fillings and baking again.

Filling
  1. Preheat the oven to 160°C and lightly grease a 25cm ceramic tart pan.
  2. Prep the savoury crust according to the directions and press into the bottom and sides of the pan.
  3. Bake for 15-20 minutes, until just barely golden. Remove and allow to cool completely.
  4. Increase the oven’s temperature to 180°C. Sprinkle the tart crust with about half of the bacon.
  5. Place the goat’s cheese in a food processor and process until crumbly. Add the eggs, cream, garlic, basil, salt, and pepper and process until well combined and smooth, scraping down the sides with a rubber spatula.
  6. Pour the filling into the tart crust.
  7. Lay the tomato slices over filling, overlapping as necessary, and sprinkle with remaining crumbled bacon.
  8. Bake for about 30 minutes, until the centre, is set and no longer jiggles when shaken. Allow to cool for 10-20 minutes before serving.

Tips
  1. If you prefer not to make your own pie crust, purchase a store-made pie crust when buying the filling ingredients.
  2. Should you wish to use this keto pie crust for a sweet dessert, instead of as a savoury one, reduce the salt from ¾ to ¼ teaspoon, and replace the garlic powder with ¼ cup baking sugar substitute.
